Wagyu Short Ribs

Exceptionally rich and built for slow, indulgent cooking, our Wagyu Short Ribs are cut from heavily marbled sections of the plate and chuck and raised with patience from start to finish. Known for their deep beef flavor and luxurious fat, these ribs deliver fall-apart tenderness and a silky, mouth-coating richness when cooked low and slow — pure comfort with authority.

Each set of short ribs is hand-cut and graded by marbling, allowing you to choose the experience that best fits your preference.  The average weight of our short ribs is 2.7 lbs.

Our highest marbling score. Ultra-rich, deeply juicy, and incredibly tender, with Wagyu fat that renders into a luscious, buttery finish. Restaurant-level braises and next-day leftovers that somehow taste even better.

A perfect balance of richness and structure. Meaty, juicy, and full-flavored, with enough marbling to stay moist through long braises without overwhelming the dish.

🥉 Bronze
Lean by Wagyu standards but still packed with flavor. Clean, beef-forward short ribs that become tender and satisfying when cooked properly — ideal for classic braises, stews, or smoking.

Our cattle are farm-raised without shortcuts, allowing natural marbling, tenderness, and flavor to develop over time. Each cut is hand-selected and prepared to meet the standards we expect for our own table.

This is beef raised the right way — consistent, honest, and uncompromising.

Care Instruction:

  • Store meat in the refrigerator at or below 40°F (4°C).
  • Keep meat tightly sealed to prevent contamination.
  • Freeze if not using within 2-3 days.
  • Thaw meat in the refrigerator or under cold water for best results.

Due to USDA regulations, we cannot accept returns of raw meat. However, if your order arrives damaged, compromised, or does not meet our quality standards, we will work with you to provide a replacement or refund at our discretion.
